PALEO GARLIC AIOLI
When making changes to my lifestyle and eating to improve my health, I wanted to use a good Mayo as a source of healthy fat to add to my salads and dishes.
I really struggled to buy a healthy Mayo ie. one that didn’t contain SEED OILS, which we know are inflammatory and very dangerous to our health. So after some research I came across a number of these super quick and delicious healthy mayonnaise recipes.
I love garlic and mustard, so I always add these, and often some fresh herbs too. The technique is FOOL PROOF! No more whisking for hours… promise!!!

1 Minute AWESOME PALEO GARLIC AIOLI
Yield: Makes about 1 – 1/12 cup. Flavour improves in the fridge.
INGREDIENTS:
- 1 whole fresh large or extra large egg
- 2-3 tsp fresh lime, lemon juice or vinegar
- 1/4 teaspoon Himalayan salt
- 1 cup extra light tasting olive oil ** I use 1/3 cup avocado oil, 1/3 macadamia oil and 1/3 olive oil for the best mix!
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon Dijon Mustard
- 1 garlic clove, peeled and coarsely chopped
EQUIPMENT NEEDED:
- An immersion or stick blender
- A tall, narrow glass jar or beaker – I use the one that came with my immersion blender
INSTRUCTIONS:
1 – Gently add the egg to the bottom of the jar
2 – Add all the remaining ingredients to your glass jar and let them sit for a few seconds. Just long enough for the egg to settle comfortably at the bottom of the jar, underneath the oil
3 – Insert your immersion blender and push it all the way down until it makes contact with the bottom of the jar, covering the egg
4 – Push the power button and do not move the blender for a full 20 seconds. Almost instantly, you’ll see the magic take place right before your eyes: the oil will start to emulsify and turn into this lusciously creamy and thick concoction, slowly making its way all the way to the top of the jar
5 – After 20 seconds, the transformation should be complete, so start gently moving your blender up and around and up and down just to make sure that every last bit of oil gets well incorporated
6 – Store in the refrigerator in an airtight container for up to 2 weeks… enjoy
