Fresh 4 Garden Green Pesto

These days there are so many fantastic recipes around to make cooking simple and eating pleasurable when you have dietary exclusions in your daily meals.

So when I was thinking of some helpful recipes for my blog, I reflected back to some of the recipes and tips that really helped get me going when I first found out that I needed to remove a few foods that trigger my health flare-ups.

So over the next few blog posts, I’m going to take you back to some of those recipes – eg how to recreate dips, dressings, sauces, milks, cheese, cream and icecream!

I find that I can easily stick to basic fresh produce day after day, but with a few yummy dressings and sauces thrown around for some added flavour, nutrition and variation.

Today I’m going to share one of my all time favourites which provides a great boost to your daily intake of greens, and marries well with so many other foods.

This Four Greens Pesto is not only dairy and nut free, but also ticks the boxes for vegans, paleo, and autoimmune protocol (AIP) preferences.

In my photos I have topped some roasted sweet potato rounds with smoked salmon and a big dollop of Four Greens Pesto, and the next is my lunch box for work…salmon pattie with left over veges topped with pesto and avocado citrus dressing…so good 🙂

The nutritional yeast in the recipe allows for the nutty cheesy flavour, replacing the usual pine nuts and parmesan.

Benefits of nutritional yeast flakes:

  • It’s a vegetarian source of Vitamin B-12 (This is a crucial nutrient for the body involved in the production of red blood cells and for producing and maintaining myelin, the protective insulation around your nerves. Most sources of Vitamin B-12 are animal based, so nutritional yeast is a major player in the nutritional wellbeing of vegans and vegetarians. One tablespoon will provide an adult with a full day’s supply of B-12)
  • It’s high in protein (2 tablespoons contain 9 grams of protein. That’s more than in 1 cup of whole milk or a large egg and its a great source of energy for your workout mornings).
  • It’s high in fibre
  • It’s gluten and grain free
  • It’s a great source of of folate…natural folic acid

Nutritional yeast is a dynamo, packed with benefits.

Sprinkle it over foods for a nutty, almost cheesy, flavor.
